Green Goddess Chicken Salad
At reCAP, we're passionate about repurposing what we already have: leftovers, herbs that need using, and the Mason jars sitting in your cabinet. Our Green Goddess Dressing has become a staple here, and our favorite way to use it is this easy, herby chicken salad. Simple, fresh, packed with texture, and perfect for storing in a mason jar with a reCAP POUR lid.
Why you'll love it: uses leftover rotisserie or baked chicken, adds crunch from carrot, celery, and pine nuts, comes together in minutes, stores beautifully, and doubles as lunch, an appetizer, or a sandwich filling.
Ingredients:
- 1 cup minced rotisserie or baked chicken
- 1 carrot (finely chopped)
- 1 tbsp minced celery
- 2 tbsp chopped fresh parsley
- 2 tbsp pine nuts
- 1/4 to 1/2 cup Green Goddess Dressing
How to make it:
- Combine the chicken, carrot, celery, parsley, and pine nuts in a bowl.
- Add 1/4 cup Green Goddess Dressing and mix until combined.
- Add more dressing for a creamier texture.
We love pouring the dressing straight from a jar with our reCAP POUR lid — no mess, no drips.
How to serve: spoon onto crackers, layer onto toasted potato bread, add to butter lettuce cups, or store in a jar for grab-and-go lunches. Keeps well refrigerated for several days when sealed properly.
Store it smarter: Skip the plastic containers that stain and crack; store in a Mason jar with a reCAP lid instead. Shop the POUR Lid →
