Green Goddess Chicken Salad
Ingredients
-1 cup rotisserie or baked chicken, minced (leftovers work great!)
-1 carrot, finely chopped
-1 tablespoon celery, minced
-2 tablespoons fresh parsley, chopped
-2 tablespoons pine nuts
-¼–½ cup Green Goddess Dressing
Instructions
1. In a medium bowl, combine the chicken, carrot, celery, parsley, and pine nuts.
2. Add ¼ cup of Green Goddess Dressing and mix until well incorporated.
3. For a creamier texture, add more dressing as desired.
