Everyone has their version of this savory green classic. Bright, herby, and just a little tangy, Green Goddess Dressing has been adding zip and zing to salads for over a century.

And like most great recipes, it comes with a story.


A Dressing with History

Green Goddess Dressing traces its origin back to the Palace Hotel in 1923, created as a tribute to the play The Green Goddess. Actor George Arliss, the lead in the production, stayed at the hotel while performing in San Francisco. To honor him, Chef Philip Roemer crafted a creamy herb dressing inspired by the show’s name.

The original version blended mayonnaise, sour cream, parsley, chives, anchovies, lemon juice, and vinegar. It was rich, bold, and unmistakably green.

After decades of popularity — especially between the 1920s and 1980s — the dressing faded from many menus. Today, updated versions lean lighter, using more fresh herbs and less cream, while keeping that signature brightness.

Green Goddess Dressing

Ingredients

-½ cup cilantro, chopped

-¼ cup fresh chives, chopped

-1 lime, freshly squeezed

-½ green jalapeño, seeds removed (or keep for extra heat), minced

-1 medium ripe avocado, peeled and cubed

-1 clove garlic, minced

-½ teaspoon salt

-⅛ teaspoon black pepper

-1 teaspoon honey

-5.3 oz container Greek-style yogurt

-⅓ cup olive oil–based mayonnaise

-1–2 tablespoons extra-virgin olive oil (optional)


Instructions

1. Begin by preparing and chopping all ingredients. This makes blending easier and ensures a smooth finish.

2. In a blender, combine avocado, cilantro, chives, lime juice, jalapeño, garlic, salt, pepper, and honey. Blend until smooth.

3. Transfer the blended mixture to a large bowl. Add mayonnaise and yogurt. Whisk until well incorporated.

4. If desired, add 1–2 tablespoons of extra-virgin olive oil to thin the dressing and enhance flavor.
