How to Make Fresh Lemonade (with Mint & a Smarter Shortcut)

Nothing says summer quite like fresh lemonade on a picnic table. And once you make it from scratch, there’s really no going back.
Let’s be honest, powdered lemonade just doesn’t hold up. It’s overly sweet, a little artificial, and kind of misses the point. Real lemonade? It’s bright, balanced, and actually refreshing.
And here’s where this gets interesting…
The Twist: One Lemon, Way More Flavor
Instead of squeezing a bunch of lemons, this method uses something called lemon “super juice.”
It sounds fancy, but it’s not.
With this approach, one lemon can yield about 9 ounces of juice, compared to the usual 1 ounce. You’re using the whole fruit (peels included), which means:

-Better value
It’s basically fresh lemon concentrate, but cleaner, brighter, and way more efficient.
Step 1: Make Lemon Super Juice
Active Time: under 10 minutes
Ingredients
-1 organic lemon
-1 tablespoon citric acid
-⅛ teaspoon potassium citrate (optional)
-1 cup water
Instructions
1. Start with a room temperature lemon. Roll it on the counter to release juices, then wash and peel.
2. Add the peels to a pint Mason jar with citric acid. Shake and let sit for 1 hour.
3. Juice the lemon. Add juice, peels, and water to a blender. Blend on high for 1 minute.
4. Strain into a Mason jar using a fine mesh strainer.
5. Seal and refrigerate. Label if you’re feeling organized.
Step 2: Make Lemon Mint Ice Cubes (Optional, but Worth It)
Regular ice waters down your drink. These don’t.
Ingredients
-¼ cup lemon juice
-2 cups water
-Fresh mint
Instructions
1. Add mint leaves to an ice cube tray or freezer-safe jar.
2. Mix lemon juice and water, then pour over mint.
3. Leave about ½ inch space if using jars (freezing expands).
4. Freeze until solid.
Step 3: Make the Lemonade
Ingredients (½ Gallon)
-1 cup lemon super juice
-1 cup honey or sugar
-6 cups water
Instructions
1. Dissolve honey or sugar in 1 cup hot water.
2. Pour into a Mason jar with lemon juice and remaining cold water.
3. Refrigerate until chilled.
